You need to decide what it is you are looking for. And a simple division
into the number of employees may not provide the results you need.

If you want to know what each service worker needs to clear to cover the
costs, omit the clerical and "office" workers from your count, etc.

Knowing what you intend to use the data for will dictate how that data is
compiled.
