If you look in Store Ops Manager, File menu, Configuration, and then look at Ordering. There doesn't appear to be any way to set a deposit. You'd probably have to make it an order of another sort. I would have thought it'd be a fairly normal thing to want to do, but there you go. So it is either all or nothing.
