What does Quickbooks use for data storage? Is it possible to import
daily transactions from a third party POS application? What would we
use? ODBC, etc.

QB2007 et seq uses a commercial RDB (Relational Database) optimized for QB.
It is accessed using a SQL (Structured Query Language) interfaced via the QB
SDK (Software Development Kit).

The SDK is available from the Intuit Developer Network

The SDK will allow you to "code" directly with QuickBooks so you can
access and insert data. Additionally, there are also a host of 3rd
party applications which might be a helpful at
www.marketplace.intuit.com.

Some will make the coding easier (see the tools & utilities section)
plus you might get lucky and find an application that already
integrates the third party POS (see ecommerce section).
