What accounts are affected?

Is there any kind of chart that tells me what accounts are affected
(debited or credited) by a given form? For example I know that an
Invoice form (I mean the quickbooks form) should debit "Account
receivable" and credit "sales" I guess. I know that with more
accounting training I should be able to figure it out but a chart will
be nice for now.

Stick with more accounting training as the solution to your dilemma.

Knowledge, experience and training will never be made redundant by a
chart.
