When I reopen Estimate after using the modified "Work Order" template, the latter is the default the next time. That is > why I asked. The Description column doesn't seem limited as Haskell says -- I filled up the page in Preview mode w/ random text. Hadn't ever had need for more than a line or two, but certainly doesn't seem particularly limited from that trial.
