Possibly corruption, possibly occuring from the conversion. I
doubt you will see that behavior if you create a New Quicken
file and add or modify categories there.
If the phenomena appears immediately after the conversion, I
would think it's either your Money data or the conversion has a
bug. If Money has a utility to clean up its data, I would use
that, then redo the conversion.
For the Quicken data: try Validating your fileset (File > File
Operations > Validate).
