PSJ originally posted the workaround, but I think it's worth re-iterating in
its own thread.
1) Ctrl-Alt-Delete to bring up Windows Task Manager.
2) Click on Processes tab
3) Select Process AcroRd32.exe
4) End Process
I'm using Acrobat Reader 8.1.1 and don't have the problem any more.
BUT, it was definitely an annoyance in some previous versions.

There is a work-around. Open task manager/processes & double click on "image
name." There should be a process at the top that starts w/acro (don't
remember the whole name), end that process, go back to your attachment &
click on delete. It should delete at this point -- at least this works for
me.
