Is it possible to online-update a single account rather than do the
whole one-step-update?

yes. Go through the normal one-step update but when the screen pops up
showing your accounts uncheck those that you don't want to update.

Open the desired account to the "register" (or "Transactions"
tab/button for investment accounts).

Below the transactions portion of the register is an "Update
Transactions" button. Click that and you're on your way.

I should have added that the above works for Q2008 (and possibly
Q2007, Q2006), but not Q2005.

An alternative, if you don't have the "Update Transactions"
button at the bottom of the register, is the register menu
choice, "Update Now". Should work in versions from at least
Q2005 thru Q2008.

Thank you, those of you who answered. I'm continually impressed by
the wealth of knowledge that exists out there (that I don't have).
