A given Quicken account can only be denominated in one currency,
and you must choose that currency when you first create the
account ... it can never be changed.
If you have an account that contains securities or, in the case
of your post, cash, denomintated in Euros; you need a Quicken
account created with Euros as its currency. All cash (and
securities) in that account will be denominated in Euros.
You say you purchased some "shares" of Euros, which sounds more
like you purchased a security. But if all you did was buy some
Euros with your Dollars you just have cash and when you transfer
the funds from your $US account to your Euro account, Quicken
will convert the $ amount to Euros at the "current" exchange
rate.
You'll want to insure the your Quicken Currency List is
up-to-date for the date you bought the Euros, then for any
subsequent date you wish to know the value of the account in
$US. I believe you will have to maintain the Currency List
manually.
