I have claimed my mother as a dependent on Federal income tax return, as I
provide more than 50% of her living expense.
Sadly, she passed away in late 2007.
Can I still claim her as a dependent in my 2007 tax return?
Is any of her funeral expense tax deductable (or reduce my tax in any way)?

You can claim her as a dependent for 2007.

None of the funeral expenses are deductible.

Technically wrong.

A correct statement would be: None of the funeral expenses are deductible
for INCOME tax purposes. They are deductible for ESTATE tax purposes.

read the instructions for dependents
you should be able to claim your mother - if you meet the requirements

the funeral expenses may be deductible against your mother's estate
the place to claim that is on a a 706 (estate tax)
